What do we mean when we say "speech" and "language"? 

Speech refers to the way we talk and form our words.  You may hear it referred to as articulation, phonology, or motor speech.

Language refers to the vocabulary, grammar and social use of language. Other terms you may hear relating to language include; syntax, content, pragmatics, form and use.
